Cocoa powder production

I'm starting a small process using cocoa beans to introduce cocoa powder to the local market, I had a feedback from Clay Gordon that butter can be produced from lower grades of beans without even roasting just extruding then deodorizing, higher grades of beans are roasted to yield flavored cocoa powder, I do not have good demand for the butter and I need only the raw cocoa powder, is it possible to have only powder from beans without extracting fats (butter).Many thanks for your help

Hi,I've attached a photo of two beans that were in my current batch. Is this basically the same thing in both beans? The bean has germinated and sprouted - the sprout is in the top bean and the bottom bean shows just a hole where the sprout has fallen out of?Can someone confirm/correct me on this? And also, is my terminology (germinated, sprout) correct?The next question is then - what impact on the final chocolate do these beans have? Is a few making it through OK or will they negatively...
Making cocoa liquor

Greetings all,I'm looking for a way to make cocoa liquor from nibs to feed my santha grinder. After much investigation I purchased a spice grinder which grinds nibs into powder, but this also seizes up the Santha. Even when the ground powder is warmed it does not melt into liquor. Perhaps I need a different type of grinder, maybe one that produces more of a shearing grind rather than a rotor with blades which produces only powder.I'm trying to avoid the use of cacao butter so I'm looking for...
How to deodorize cocoa butter???

A colleague of mine is trying her hand at cosmetics, however shes using a non deodorized cocoa butter. She says she can stand the smell, but has 50# of the stuff (I gotta agree with her, it smells like...not something Id put on my face, if I put stuff on my face...). She asked me to ask here... how do you deodorize it? Is it something she can do herself? heat or??? cheers alan

riends, I have problem, buy a bag of cocoa and chocolate when I did I realized I had a very acidic taste .. It was when I realized that the seeds have vinegar smell. as I can get this smell to make chocolate? thanks
