Cocoa cake pulverizer?

03/10/11 08:21:01, by Carlos Eichenberger

I'm accumulating a LOT of cocoa cake and have not been able to find anyone local that is willing to pulverize it. Any suggestions for an inexpensive solution? I easily have 400 lbs of cake and a lot of demand for the cocoa powder! At the moment we're pulverizing small amounts with a food processor and varying size sieves but it's ridiculously time consuming.Ideally the solution would be under $1k.

Cocoa Bean Storage

09/30/11 03:18:51, by Shana Wilkie

Hi all,Could anyone advise me how to store my cocoa beans before I roast them? They arrived in jute bags. I am only starting out and still experimenting with roast times, winnowing, grinding, refining. I have read that beans can go moldy. At the moment I am re-bagging into smaller jute bags and storing in a cupboard. The average daily temperature in there varies about 15-18degrees. Is this cool enough to store the cocoa bean?Any help or advise is greatly appreciated. On separate note, I am...

Cocoa Shell Infusion

08/04/14 22:09:04, by Jennifer Smith

I recently read a bit about cocoa shell infusions and I was wondering if anyone on this forum had any experience or comments about this? I've heard about local breweries and chocolate makers teaming up to make beer with the cocoa shells and now I have read about drinks made from infusing the cocoa shells in milk, etc. After picking through bags of cocoa beans and finding all sorts of stuff (hair, etc.) I can't imagine wanting to drink an infusion made of the shells. Will someone enlighten me?

Cocoa Bean Exchange

10/26/12 12:07:38, by Paul Mosca

Would folks be interested in a cocoa bean like kind exchange? I like to trade cocoa beans of any volume for other cocoa beans. I am interested in Ecuadorian Nationales that are organic certified. I can trade fair trade and organic Peru beans. This exchange may give us all a chance to work with cocoa beans outside or in addition to our normal supply channels.

Samoan cocoa beans

03/06/12 18:17:04, by richard david

4 months ago I was walking through a cocoa plantation in Samoa I didn't know I had. 30 minutes into my walk, thoughts of excitement and gratefulness entered my mind. My grandfathers determination and fighting spirit acquiring the lands I now called home. Dazed with excitement, I started on a journey of growing and producing the best cocoa bean I could possibly produce and share it with the world. Growing up in Samoa drinking cocoa was like drinking water to others. We would pick them off the...

What happened to Samoan cocoa?

03/07/12 22:06:16, by Howard & Hanna Frederick

Hello everyone: I've been doing research into Samoan chocolate. Twenty years ago it had one of the best reputations in the world with most of its crop being classified as "fine and flavour" (top ICCO category). Today, despite having 5000 acres of fine cocoa, Samoa has only a (very strong) domestic market and a (very small) export to New Zealand (Samoans). I'm working on a plan to revive Samoa's chocolate industry with a group of NGOs and private sector. One of the things I'm researching is...

COCOA butter press - really necessary?

01/09/14 07:15:30, by Domantas Uzpalis

Guys, what is your take on natural cocoa butter vs deodorized cocoa butter in the recipe? Would natural fresh pressed cocoa butter add organoleptic properties to chocolate that could be really sensed? Both, natural and deodorized butters are with no flavor just one is with aroma. So I wonder if it worth investing in expensive cocoa butter press for chocolate manufacturing? Is the result worth the hustle?

Cocoa plantation. Samoa

Talofa, Hi, I was wondering if any of you wonderful chocolate gurus know where I can take my husband and 4 young children (who really want to see a 'chocolate tree'!) on a cocoa plantation tour on the island of Upolu, Samoa. I have been reading how Samoa used to grow the best cocoa beans in the world, yet I cant find any information at samoan tourism sites etc. Would greatly appreciate any knowledge on this, and we happy to pay for a tour. Thanks for any help in this matter,Yours...
