Hello everyone, A question concerning hygiene here for a small bean-to-bar chocolate production in Europe. To maintain a good flavor I roast whole cocoa beans. I roast in an oven. Ofcourse after the bean roasting comes the breaking and winnowing. I wonder if its good the sterilise the nibs (with steam) after winnowing en before grinding them. The most hygienic way would be break-winnowing-steam-roast. I have tried to oven roast nibs but it is difficult not to burn the nibs. Does anyone...

There's quite a few sites on the net advertising cold-pressed cocoa butters. On another post somewhere (which I cannot seem to find), someone mentioned that it was not possible to produce cocoa butter unless it was pressed at least 140 F (???).If there's such a thing as "cold-pressed" cocoa butter, what temperature is considered "cold". I want to try roasting my own cocoa beans at home. I stumbled across a 1947 'Home Ec' booklet put out by General Foods (now Kraft) that gave a brief history of cocoa making in the US and talks about the fact that Baker's Chocolate for baking is just roasted and shelled cocoa beans ground up.I understand that there is quite an art to making chocolate. I have been having a problem with my Cocoa butter chipping when removing it from my molds. I have tempered it and it has a beautiful shine when it comes out but some of them have portions of the cocoa butter chipped off. I am using a spray gun when applying it to the mold.
