'Compound' chocolate, or 'Reconstituted' Cocoa

Hi- new here. I'm not totally lost and I appreciate 'bean to bar' but I'm going to be trying to mess around with compounds for a little bit. There are many factors to iron out just with regards to molding and packaging before I go buy big equipment. My goal is to make a pretty darn good bar out of dutched cocoa powder, cocoa butter, and fondant sugar. Perhaps some liquid lecithin. I've learned that so long as I use ingredients that are finer than the 45 micron level I don't need a wet grinder...

I'm currently working with cocoa farmers in Peru and am trying to get better information on pricing. I have fragmented information for some markets, but often the information is stale and I'm not sure how reliable.I'm interesting both in FOB prices as well as Farmgate prices.Basically looking for data points (e.g. what is the premium to bulk for fine cacao in Colombia, Venezuela, Ecuador, Trinidad, etc.) And the any color on how that premium would be reflected at the farm gate level.For...

Hello!   After 2 years of living and working in Colombia, I finally have access to some cacao and an affordable way to ship it.   I have a small chocolate factory in Medellin.  We are origencacao.com. I have 4 different beans that I am working with right now, all are available on a regular basis in small and large lots. Single Origin Cocoa butter?

It seems that many chocolate producers add cocoa butter to their ingredients.Since cocoa beans are approx 50% fat (cocoa butter) why would you need to add extra?If you are producing a single origin bar, shouldn't this cocoa butter also be from the same origin?Why then are there NO single origin cocoa butters available?
