It's a flourless cake bottom placed strawberries then poured over chocolate mousse then another thin cake layer then ganache. It's from Marcel Desaulniers Death by chocolate, great book. In his book he does 10" cake but I adapted to this size. Thank you
Fresh strawberries are stuffed into a frame and you are pouring what over them? Is this cake batter? Then you bake and glaze and arrange a slice of strawberry over the top (the other photo)?
