Hi April,The best chocolate shop that I have seen is Ye Olde Friars. Living in northern England we used to holiday ever summer in the Lakes and one of the highlights of this trip was visiting this shop. Anyways enough of the reminiscing! They have just launched their web-site which is fantastic news as a live in the south now. I don't know what your tastes are but I love the dark chocolate cherry liqueurs which have the stalks and pips still attached. Also I have developed a taste for the unusual Hachez bars, flavours such as strawberry and pepper. Weird but surprisingly tasty! Greetings to my fellow chocolate lovers. The passage of time effects surprising changes.... I was the girl on the block who gave away her Halloween candy. I didn't like sweets - especially chocolate! Fast forward many years - and here I am posting on thechocolatelife. I'm fairly new to fine chocolate. I'm looking for a company that I can order from that sells a selection - not just from one chocolatier. Chatham's stock represented 200+ chocolates from fine chocolatiers world-wide. Any suggestions for websites, companies, etc.? Unfortunately, Chatham's of Scottsdale/Phoenix has closed shop.

Question on the shelf life of raw chocolate

I'd like to begin experimenting with making molded raw chocolates and I have some questions on shelf life/storage. I read on another website that the raw chocolates need to be kept in the refrigerator or freezer and that the shelf life in the refrigerator was about 4 days and in the freezer 10 days. Since non-raw chocolates do not need refrigeration and last for more than 4-10 days I'm wondering if the information I found is simply wrong? Could someone please verify if raw chocolates need refrigeration and what the shelf life is?

Not big samples, but yes, samples. How much chocolate can one eat in a day? Small packets and small bars or cocoa. My experience has been that this is not every exhibitor, but several offer samples to buyers. Maybe things are tighter this year. Since I blog about chocolate, I found it very helpful last year, although mostly I collected collateral. We also placed orders. I think samples would most likely go to buyers.I thought there was a no wheels rule last year, but I saw people with wheels. Frank brings a small backpack. Since most of the exhibitors scan your badge, they can always follow up later.I received chocolate samples in the mail after the show, and that was most helpful.This show is overwhelming but so much fun!!

Thanks, Clay. I'm going as press this year, but Frank who does our chocolate tastings and chocolate tours and chocolate scavenger hunts is a buyer. This will make it easier for us. Most of the exhibitors love to hand out samples to take home. Overwhelming to try everything there.

Lana:There is an official policy PROHIBITING people attending the show from removing samples from the show floor and there is NO selling from the show floor. However, you should be able to sample almost everything you want to try.There are security people at the exits and they randomly look at bags so if you do have something and they find it in your bag, they will take it from you and donate it to local food bank. The rules don't apply to exhibitors (or the press, thank goodness), so you may be able to arrange to meet outside the show floor and have them deliver samples that way.Also, FYI, bags with wheels on them are also officially prohibited.:: Clay

I'll be there Sunday. My chocolate company won't have a booth, but just look for the guy in the yellow polo shirt with the logo that says The Tea Room - we make organic, tea-infused chocolates out of Napa. I went last year and had a great time. My advice--wear comfortable clothes and very comfortable shoes. Map out your path before hand and don't waste time on booths that clearly aren't in your interest. There isn't time to visit everything, so be picky. At the same time, be open to explore if something turns up. While there, I got to meet Drew Shotts and Norman Love. Make time to go to the Farmers Market Saturday morning at the Ferry Building. Fun, fun, fun. Recchiuti's is in the Ferry building. You will have a good time.

Hey Andre! This is my second Valentine's Day. Last year I learned that it is very much a last minute Holiday for us. Most everyone came the week of Valentine's Day. We also learned to have things like baskets or sampler boxes of truffles made up because a lot of the shoppers wanted very easy gifts. They liked coming in and picking up the big pretty baskets or boxes instead of choosing truffles to have us box for them. Then there are the little packaged chocolates for those customers who want just a little something to give friends. We sold a lot of those too! I like what Sarah said...if you run out you run out. Be ready to start cranking out Easter Bunnies like crazy! ~Wendy

I think he means his first Valentine's Day in the chocolate biz and how to handle the busy-ness.I think if you plan well and work really hard then you can just let it go after that. If you run out, you run out and most people get that if they are coming to a little artisan shop, especially in your first season. The people that don't understand might be "happier elsewhere" and you might be happier without them, too!

I'm looking for another source for bulk couverture. I usually buy through www.gourmail.com because they have the best prices I've found ($49.95 for 11 pound blocks of Callebaut or 6.6 pound blocks of Valrhona), but the selection is limited to a few products out of the line. Any recommendations for other sources for bulk couverture?

Many craft stores also carry cake decorating and hobby confection making supplies such as the foil cups. Here in North America, we have a large craft chain called Michael's which carries exactly those foil cups, and in different colors and sizes.Hope this helps.Brad Churchill

Need Help in Finding A certain product

Hello, I am having a hard time locating a certain product. I have the book chocolate and confections by peter greweling, and on page 70 he is filling the gold foil cups.
