I'm having somewhat the same issue. I temper my chocolate by hand in the marble. But I'm having trouble lowering its temp because of the amount of chocolate
plus the weather won't help me, it's so frustrating
How much chocolate for my melter
Can anyone tell me what the minnimum amount of chocolate I should use in a 6kg melter?
