The Academia de Cacao is a week-long, hands-on, fieldwork-based program created chocolate makers of any size who are interested in quality: what quality means, and how to improve quality by gaining a more thorough understanding of genetics, propagation techniques, farm management techniques, and harvest and post-harvest practices with a special focus on fermentation techniques and how to optimize them.

The inaugural August 2015 session of the AdC sold out in less than a month, and with a strict upper limit of 15 people, the May 2016 session is also sure to sell out quickly.
The price is $1,195 per person and is all-inclusive in-country with standard exceptions (e.g., meals not taken with the group, bar bills, tips, personal expenses, etc). Participants are responsible for airfare to and from Managua, and should plan to arrive in Managua on Sunday the 8th and depart on Saturday the 14th or Sunday the 15th. An optional day of light sightseeing is planned for the 14th.
